He was a character in the Disney's Stars and Motor Cars Parade.
He used to be a Meet and greet character all the time, and still is during Star Wars Weekends.

Luke Skywalker was played by actor first appeared in Star Wars: Episode IV: A New Hope, and was in the Star Wars films, books, and video games proceeding it in the story time line. Luke was also in a cameo appearance in prequel Star Wars: Episode III: Revenge of the Sith, as a newly born baby.
[edit] Character Synopsis
Son of Anakin Skywalker's and Padme Amidala's forbidden love, he was raised by his Uncle Owen and Aunt Beru on the Dessert Planet Tatooine, not knowing the true identity of his parents. After his droid, R2-D2, runs off, he meets a Jedi Master named Obi-Wan Kenobi, who reveals that his father was a Jedi, but conveniently mis-leads Luke to believe he was killed, instead of the cold truth Luke would later learn. After discovering that his Aunt and Uncle were dead, Luke went off with Kenobi on a mission to save Princess Leia Organa, and becomes the Rebellions greatest hero. Through his many adventures he becomes a Jedi Master himself under the training of Yoda, discovers that Darth Vader is his Father, and that Leia is his sister.
