Early on with Star Tours 2.0, I discovered that C-3PO's speech at the beginning of the ride gives a clue as to which opening scene you will see. Thanks to on-ride audio from episode 76 of the Communicore Online podcast, I can provide a transcript for the Stormtrooper opening.
If you hear this speech before the shield wall drops, you can expect to see Stormtroopers, the Millenium Falcon and a shootout with Han Solo. If you don't hear C-3PO say "R2-D2" in the opening speech, you can expect to see Darth Vader.
Male voice
Star Tours 1401, you are cleared for departure. Initiating takeoff sequence.
C-3PO
What?
Female voice
Auto takeoff sequence initiated.
C-3PO
R2-D2 what's going on here? We are not ready for takeoff!
R2-D2 beeps
C-3PO
The captain isn't on board yet.
R2-D2 beeps
[Shield drops, revealing C-3PO.]
C-3PO
You know I can't fly this thing.
R2-D2 beeps
C-3PO
No, neither can you. We need a proper pilot.

I'm back with the other half: Episode 82 of the Communicore Online podcast had two audio ridethroughs of Star Tours. I have transcribed the script that you hear before the Darth Vader opening scene.
Male voice
Star Tours 1401, you are cleared for departure.
C-3PO
1401? That's us! We can't take off. The captain isn't on board.
Female voice
Auto takeoff sequence initiated.
C-3PO
Oh, no! Oh, excuse me, you don't seem to understand. I am not the captain, I am C-3PO!
[Shield drops, revealing C-3PO.]
Male voice
1401 cleared for takeoff. Contact departure on frequency four-two-niner.
C-3PO
Wait! Wait!
R2-D2 beeps
C-3PO
R2-D2, I am not programmed to fly these things. Now just turn us around this instant, before we get into trouble.
R2-D2 beeps
C-3PO
I knew it!
Male voice
Star Tours 1401, you are cleared for departure.
C-3PO

Very cool... I doubt I would have noticed the nuances in the script & that they were tied to different sequences.

I forgot to mention that Dennis is right. If you hear C-3PO before the blast shield goes down, you'll get the droid scanner/millenium falcon intro. Otherwise, silence indicates Vader
