You can ask when you get there, but they can't guarantee anything. Even if you don't have a window seat, you could always go out on the outside deck to watch them from there. Plus, there are other tables in the restaurant (not just directly next to the window) that will give you a good view as well. One way or another you'll get a great view of the fireworks from the CG.

Like Sarah said, you can always get up and walk outside to the balcony to watch the fireworks.

Even if you get a seat by the window, I still think you'd be better served by going outside to the observation deck. Sometimes the windows are all fogged up so the view isn't that great anyway.

Even if Cali Grill didn't feature the MK fireworks, it would be well worth having dinner there, IMO. Additionally, if you're on the "far side" of the room away from MK, while you'll need to go outside to see MK's fireworks, you can see EPCOT's fireworks to some extent!

book your dinner ressie for 1 to 1 1/2 hours before the fireworks begin and arrive another half hour or so before the time of your ressie and tell the CM at the podium when you check in then that you are early but want to check in and would love to wait for a table with a good view of wishes; but going outside on the deck rocks just the same;
